好的馬蹄糕要彈牙,有馬蹄味。馬蹄粉只能用廣洲泮塘的出品,品質最佳。馬蹄愈大粒愈爽,愈新鮮愈香,必須逐粒挑選。馬蹄要拍,不能切,有大有小,入口時才有複雜感。馬蹄糕食法可凍食,亦可用微波爐翻熱或煎香來吃。煎馬蹄糕: 一.每塊糕厚度約一點二公分不要薄,否則不彈牙。二.撲上少許生粉或粟粉才煎(這樣會入口香脆)。用中小火燒熱平底鑊,放入油煎馬蹄糕, 每邊煎約三分鐘便可。切忌用猛火,否則表面燒燶而中心還未夠熱。三. 最好是等一分數才吃,這樣馬蹄糕更為彈口。
