Dutch Shallot, scientifically known as Allium ascalonicum, is an important cultivated variety of shallot. In Chinese, it is also often called "red shallot" or "lobed onion." Its characteristics fall somewhere between those of onions and garlic, making it a highly important aromatic ingredient in both Western and Chinese cuisine.
-
Mild Flavor: Tastes softer and sweeter than onions, making it suitable for eating raw, such as in salads, vinegars, and sauces.
-
Versatile in Cooking: Perfect for sautéing or stir-frying, then adding to sauces. In Chinese cuisine, it is often finely chopped and stir-fried until crispy to make fried shallot crisps (known as "红葱头酥"), which are used to enhance the aroma of stir-fried meats, soups, omelets, and glutinous rice dumplings (zongzi). It is a crucial step for adding fragrance.
-
Growing Advantage: Through unique breeding techniques, Dutch growers have shortened the shallot's growth cycle from the traditional two years to just one year. This makes it easier for large-scale cultivation.
-
Easy to Grow: Suitable for growing in gardens, raised beds, or even pots.
-
Long Storage Life: Under good conditions, some varieties can be stored for up to one year.
The Dutch Shallot, with its round shape, mild and sweet flavor, and exceptionally long storage life, is a highly practical and delicious ingredient to have in the kitchen.
