Extra Virgin Olive Oil (EVOO) is the highest quality and most flavorful grade of olive oil available. Unlike regular cooking oils, it is essentially freshly pressed fruit juice (from olives) with no chemical processing or heat involved.

EVOO is produced entirely by mechanical means by crushing or pressing olives into a paste and then spinning them in a centrifuge to separate the oil from the water and solids.

• No heat is used during this extraction (often called "cold-pressed" or "cold-extracted"), which preserves the delicate nutrients and volatile compounds.

• No chemicals or solvents (like hexane) are used to extract the oil, which is common in lower-grade oils.
