Pedemontis presents their idea of minimal intervention by regenerative agriculture, such as having donkeys to regulate the growth of wild grass and fertilizes the vineyard. To express the pure terroir of native grapes, they use large vessel and old oak. Only native yeast are used and 
there is zero filtration. 

Alcoholic fermentation for 8 weeks in steel tanks under controlled temperature. Maturation for 5 months in steel on the lees.Wide and complex bouquet with hints of red fruits, fruit jam, cinnamon, vanilla and pepper.
