Heat up your tray in a preheated oven at 180°C. Place your wellington on the heated tray and cook in the oven for 15 minutes, before turning the oven down to 170°C and cooking for a further 10-15 minutes until the core temperature reaches 45°C. Take out of the oven and allow to rest for 5 minutes. Carve and enjoy!
