Over the years, castella has evolved into a Japanese confectionery that represent the perfect fusion of Eastern and Western culture. Since founded in 1624, Fukusaya use the traditional handmade method to make castella continuously. One of the major feature is one cratsaman consistently completes the entire process, including breaking the eggs, mixing the ingredients, and baking the dough. There is no use of preservatives or mixers, it is solely reliant on the artisan's skillful hand mixing. In addition, Fukusaya Castella is made by seletcted carefully ingrediens such as eggs, wheat flour, sugar, and starch syrup. Therefore, the skill of the artisan is clearly shown by the refined taste and texture. The main Fukusaya store is located in Nagasaki and now Fukusaya has 113 branches all over Japan. And on June 21, 2024, opening its first Hong Kong branch in the city'super South Side store.
