This versatile concentrated sauce is a reduced-salt version of the popular "Ero-Umoute Gomen," combining high-quality bonito flakes and Hokkaido kelp dashi with traditionally brewed soy sauce. While maintaining the signature deep umami and gentle sweetness that elevated it to a national favorite, this blend is designed for those mindful of salt intake. It functions perfectly as a noodle sauce when diluted at a 1:3 ratio, or as a dashi soy sauce when used straight for egg-on-rice and tofu. It is also an excellent seasoning for stir-fries, simmered dishes, or for marinating raw fish to create a professional-grade taste with less sodium.
