Yue Mountain Xian Diao uses glutinous rice and high-quality wheat that are all grown on its own farms to ensure the quality of the raw materials. It is brewed only during the optimal brewing period from December to early January, with natural fermentation occurring in a cave at a constant temperature of 15 degrees Celsius and 70% humidity. The best ingredients, optimal climate, and environment are the core principles of Xian Diao. After brewing, it is combined with Jian Lake water and handcrafted using traditional methods, then stored in clay-sealed containers for twenty-five years. Only after aging can it be bottled, making it an absolute premium in Shaoxing wine.
