A sponge cake mix made with flour milled from domestically grown wheat. It produces a moist, soft sponge with a delicate crumb. Simply mix with cold milk and eggs, then bake to create a light cake with a smooth, tender texture. One pack yields one 18 cm sponge cake.
Preparation
Ingredients (for one 18 cm cake):
1 pack of this mix, 3 eggs, 75 mL milk.
1. Use chilled eggs and milk. Line the cake tin with baking paper. Preheat the oven to 160 °C.
2. Place the eggs and milk in a bowl and mix well. Add the cake mix and beat until the batter becomes pale and thick. (About 3–4 minutes with an electric mixer, or 5–6 minutes with a whisk.)
3. Pour the batter into the tin. Tap the tin lightly on the counter to level the batter, then bake at 160 °C for 45–50 minutes. Insert a skewer; if it comes out clean, the cake is done.
4. Once baked, drop the tin from about 20 cm height onto the counter, remove the cake from the tin, and cool on a rack.
Store in cool dry place
