There are many theories about the origin of this wine's name, but most likely it derives from the fact that Vinsanto is consumed during Mass. Volpaia's Vin Santo is made from the pressing, in February, of dried Trebbiano and Malvasia grapes, which are then aged on native yeasts for at least five years. The drying and aging process takes place in the Vinsantaia, an attic where the significant temperature variations allow the Vinsanto to evolve naturally.

Like the best passito wines, Volpaia's Vinsanto maintains its balance for weeks after opening the bottle.
