CAKEBREAD Cabernet Sauvignon 2021 (750mL)

Each individual lot of fruit was hand-harvested at night and cold‐soaked for two days prior to fermentation to foster early color, flavor and tannin extraction. The separate lots were then fermented and barrel aged before blending, with tank size, yeast strain, fermentation temperature and barrel type specifically tailored to the fruit character of each lot. In 2021, the wines aged 17 months in French oak barrels, 48% new.

Cakebread Cellar has certified organic gardens and they value sustainability. They Graze sheep to manage the cover crops, having  falcons to keep birds from the fruit. Where spray is needed, they use only organic compounds non-toxic to larger organisms and fish.

Winemaker Niki Williams brings more than a decade of experience from some of Napa Valley’s most well-known wine estates including: Mount Veeder Winery, The Prisoner Wine Company, Franciscan Estate, and Chateau St. Jean.
