Gabrielskloof Wine Estate, a celebrated, progressive farm located in the Bot River region of South Africa's Walker Bay (just inland from Hermanus). This is their premium, small-batch Syrah, made with a specific, old-world winemaking technique.

This is the defining feature of the wine. Instead of de-stemming the grapes, the winemaker ferments entire clusters—stems, grapes, and all.

  • Whole-bunch fermentation adds lifted aromatics (perfume and florals), a subtle spicy, peppery kick, and builds fine, chalky tannins that give the wine a more elegant, structured mouthfeel. It also naturally lowers the alcohol and raises the pH, making it taste fresher and more savory than a standard heavy Shiraz.
