Shiratamako is a traditional Japanese flour made from glutinous rice and commonly used to make soft, chewy rice dumplings called shiratama. These dumplings are popular in Japanese desserts such as sweet soups, fruit desserts, and syrup-based sweets.
This premium shiratamako is made from 100% “Kogane Mochi” glutinous rice grown in Niigata, a highly regarded variety known for its rich flavour and smooth texture. The rice is carefully ground using one of Japan’s largest traditional water-powered stone mills, a historic mill that has been in continuous use since the early Showa era.
The result is an exceptionally fine rice flour that produces dumplings with a smooth surface, soft chewiness, and a delicate glutinous rice aroma. Simply mix with water to form dough, shape into dumplings, and boil to enjoy the natural flavour of high-quality rice.
