Compared with ordinary beef, Wagyu beef has a lower fat melting point and is richer and more delicate than ordinary beef. Every month, city'super purchases whole rare and precious carcasses of Yamagata Wagyu heifer, which are maiden and aged over 30 months, considered the best quality of Yamagata Black Wagyu. Tenderloin is the inside part of the loins where not much exercise is exerted. Meaty, lean and fine textured. a.k.a. 'Queen of Steak'.

Since 2013, city'super has partnered directly with one of Yamagata Prefecture's leading cattle farms to source premium chilled Yamagata Wagyu. Whole carcasses are imported regularly, offering a wide range of premium cuts with outstanding freshness.
