It's that time of year again — the Sake Fair is here! This year’s theme is building blocks, symbolising sake’s infinite possibilities. Much like building blocks, sake can be combined in intriguing ways to create unique flavours. Get ready to explore the world of Japanese sake for an unforgettable adventure filled with fun!

Sake with a Twist: Sparkling Sake

As a sake enthusiast, how could you possibly miss sparkling sake? This new style of sake uses high-grade Japanese rice (at least grade three) as its main ingredient, along with rice koji and water, and contains no added brewing alcohol. The delicate bubbles are created through natural fermentation during brewing, resulting in a clear and transparent colour.

Sake’s “Bright Young Thing”: Namazake

While most sakes are pasteurized twice, namazake is unpasteurised, so various enzymes remain in an active state. When compared with normal sake, namazake has a unique impression of light sparkling feeling as if the enzymes are “dancing” on your palate. Unpasteurised sake is very prone to change, so city’super takes extra measures to ensure proper shipping and storage. From the sakagura to when a customer picks up the bottle, the namazake is chilled so you can enjoy the freshest and highest quality products.

Nama sake more easily highlights the rice aroma and umami, and its refreshing taste makes it versatile for pairing with food.

Chokaisan Sake Komachi Namazake
Using K-1401 yeast (Kanazawa yeast), this sake is as refreshing as white wine, with a slight carbonation and a sweet and tangy flavour. It’s especially suitable for summer, pairing wonderfully with white fish or vegetable dishes.

Shichida 75 Omachi Junmai Nama
This seasonal limited-edition sake is an unfiltered, raw sake brewed entirely with “Omachi”, allowing you to deeply.

The wine label design adopts the classic style of William Morris (1834-1896), showcasing the artistic elements of his representative work, "Strawberry Thief." The design incorporates delicate natural patterns, soft plant and strawberry imagery, reflecting the wine's inspiration from fresh strawberries. This sake's pure and transparent taste, paired with strawberry-like fruitiness and subtle sweetness, perfectly embodies the essence of this classic design.

The Best of Sake Fair: Matsui Brewery's Kagura Founded in 1726, Matsui Brewery is situated in Kyoto City. The cold climate is suitable for sake brewing, so many sake breweries only produce during the winter to spring season. However, Matsui Brewery brews sake year-round, thanks to excellent air conditioning and temperature management.

If you are intrigued by their "seasonal brewing method", you must try the "Kagura Kochi Junmai Daiginjo"! This high-quality sake features a spring seasonal design, showcasing Kagura's signature fruit aromas paired with the fresh taste unique to new sake.

Dassai 39 Funaba-Kumi Nama Genshu
city’super is the sole retailer of this sake brewery in Hong Kong. From the moment the sake leaves Japan directly until it reaches the customer, it is kept frozen to maintain freshness. "Funaba-Kumi" means that the sake is drawn from the brewing tank of freshly brewed new sake. This nama sake is extremely refreshing on the palate, with a sweet and luxurious taste, a hint of peach aroma, and a clean finish with a slight dryness.
