Creative Ways to Enjoy King Crab

The Live Alaskan King Crab is loved for its plump, firm texture and thick, meaty legs. One of the best ways to enjoy it is in the hamayaki style, where the crab legs are charcoal grilled to bring out their amazing sweet and savoury flavours. A must-have for any BBQ party.

Tasting Tip:
Before you barbecue them, remove one side of the crab legs’ shells with kitchen scissors. This helps retain the crab’s natural juices and the aroma of the shell. Since king crab has a natural saltiness, you can enjoy it as is, or add lime or lemon juice to bring out the meat’s sweetness. Adding a touch of soy sauce can help lift the umami.

Sake Pairing: Chikurin Karoyaka Junmai Daiginjo
This dry sake is excellent for bringing out the sweetness of the crab. The brewery has been using its own Yamada Nishiki rice for brewing its sake since 1987. The sake is characterised by a lovely floral aroma. The palate is clean and reminiscent of spring water, followed by a semi-dry finish. A crab shell can be used as a container to combine the umami of the crab and the sake.

Australian Chilled Barley Fed MB 5+ Black Angus Beef Rump Cap / Rump Cap for Roasting
In Hong Kong, most of the Angus beef available on the market has a MB (marble score) rating of 2 to 3. This Australian Angus beef has achieved a score of MB 5+, which is the highest level among Australian Angus beef. The cattle are fed on custom formulated natural barley for a minimum of 200 days. The meat has luxurious marbling, a sweet flavour with wonderful tenderness, and a mild taste of herbs and flowers.

Australian Avocado
Australian Shepard Avocadoes are in season between February and May. This variety has an elongated, pear-shaped body; once ripened, its skin turns bright green and the flesh has a rich flavour. Thanks to its firm texture, purée made with this variety of avocado will retain bits of flesh for a varied mouthfeel.

Grilled Rump Steak Tacos Recipe

Ingredients (serves 4) Quantity
Australian Chilled Barley Feed MB 5+ Black Angus Beef Rump Cap for Roasting 570g
Tortillas 8
Avocado, diced 146g
Red onion, finely diced 52g
Coriander, chopped 2 tbsp
Lime juice 2 tsp
Salt To taste
Olive oil 60mL
Lime juice 80mL
Sugar 1 tsp
Salt 1 tsp
Ground cumin ¼ tsp
Minced garlic 1 tsp
Water 60mL
Smoked paprika 1 ½ tsp
Chilli powder 1 ½ tbsp

Steps

1. Place the marinade in a large bowl. Mix until thoroughly combined.

2. Add rump beef to the marinade. Marinate in the fridge for at least one hour.

3. Preheat grill pan to medium high heat. Add the rump beef and cook for 5-6 minutes per side until medium done.

4. Remove from grill and allow to sit for 5 minutes.

5. While the rump beef is cooking, make the avocado topping. Stir together the avocado, red onion, coriander, lime juice and salt in a small bowl.

6. Thinly slice the rump beef. Divide the meat between the tortillas. Top with avocado mixture and serve.
