Since 2013, it has been recognised as sustainable seafood according to WWF HK’s Seafood Guide. The indoor fish farm uses Recirculating Aquaculture System (RAS) and allows for stable water quality without contamination from red tides and pollutants.

The largest oysters are harvested exclusively for city’super between January to May, using the latest 3D freezing technology to quickly freeze them at -45℃ to keep the springy texture and freshness of the oysters. The oyster meat is washed and stored in cooled sea water, which helps reduce the shrinkage of the oyster meat after cooking. Suitable for frying, making oyster rice, oyster gratin and more.

The artisan mixes flour, salt and water, then coats the dough that has been cut into thick strips with sesame oil to prevent the noodles from drying out; the dough is then kneaded and pulled by hand in a figure-eight motion using a stick. The resulting udon is smooth and springy.

About the Brand:
Kayanoya’s parent company is the seasoning and food manufacturer Kubara Honke, which was established in 1893. In 2005, the company opened a restaurant with a thatched roof in Fukuoka Prefecture. When customers expressed that they wished to recreate the same flavours at home, the Kayanoya range was born – a collection of soup bases free of artificial flavouring and preservatives that is restaurant quality but can be easily used at home.

Tasting Tip:
Unlike ordinary soup bases, Kayanoya hot pot soup bases are made with dried bonito, kombu, herring, and roasted flying fish, which are ground into powder and then packaged. These soup bases are specially formulated for hot pot to bring out the freshness of the ingredients.
