- Type: Light soy sauce
- Characteristics: Light (Usukuchi) soy sauce is a light-coloured soy sauce, familiar in western Japan. Its high salt content, light colour and reduced flavour means that only a small amount is needed, allowing the flavour and colour of the ingredients to shine through. It is matured for more than one year and three months, giving it a light but well-balanced finish. Bittern is added to give a more natural salt flavour.
