This udon is made by kneading fragrant black sesame into noodles crafted using the traditional tenobe (hand-stretched) method of Shimabara. The dough is slowly stretched while being allowed to rest, giving the noodles a smooth texture, gentle firmness, and a natural sesame aroma. The richness of black sesame adds depth to the mild flavour of udon, making it suitable for both chilled and warm dishes.
Cooking tip:
Prepare dipping sauce and condiments before boiling. Add the noodles to plenty of boiling water (about 1L per 100g), loosen gently, and cook for 6–8 minutes until your preferred firmness. Drain, rinse well under cold water 2–3 times, and chill before serving.
