The Kinki fish is very popular in Japan and loved by the locals. Caught from Canada, this Kinki Fish is dried by the Japanese marinating and drying method called One Night Dried, which is to cut the fresh fish apart, remove its innards and soak in the brine, then air-dry overnight, created a richer umami taste. Whether bake in oven or pan-frying, all are suitable and delicious.
