This hand-stretched soumen is made with hon-kuzu (pure kudzu starch) and coloured naturally with domestically grown vegetables—komatsuna, pumpkin, purple sweet potato, and carrot. The noodles are produced using a unique oil-free method, giving them a refined shine, clean flavour, and exceptionally smooth texture.
The gentle sweetness of the vegetables and the clarity brought by kudzu create a delicate, elegant soumen that makes a beautiful gift as well.
Cooking tip:
Bring plenty of water (about 10 times the weight of the noodles) to a full boil. Add the noodles while loosening them, stir occasionally to prevent sticking, and cook for about 2 minutes.
Drain immediately, rinse thoroughly with cold water, and chill in ice water before serving.
Store in cool dry place
