The Panettone’s Origin Story
Since Ancient Roman times, the Romans had been mixing flour with dried fruits to make sweet bread, which was drizzled with honey to create a luxurious dessert that was only enjoyed by the royalties, the wealthy, or at special religious occasions. Panettone looks like a sponge cake, but the fermentation process is actually longer than normal bread, and takes at least three days of fermentation to create its fluffy texture. After baking, the panettone must be hung upside down to avoid the air pockets being pressed down and prevent the panettone from collapsing.
