French Belon Oyster
The King of oysters is best known for its taste of iodine, slight nutty and intense flavour cultivated in North Brittany, with a firm texture and lingering aftertaste.
French Le Gall Speciale Oyster
A varietal of the highest quality from West Brittany, it received a Gold Medal at the Concours Général Agricole de Paris in 2009. It takes nearly 4 years of maturing to produce the oyster’s distinct bite, fleshy and soft profile with a long finish, characterised by an important muscle with a sweet taste.
French Gillardeau Oyster
An internationally renowned French oyster brand famous for its delicately cultivated oysters originated from Marennes-Oléron. Gillardeau oysters are plump and soft with a unique, nutty hazel aftertaste.

Oyster Chowder with Bacon - Serves 4
Steps
- Cook bacon over medium high heat in a big pot for 5 minutes. Spoon out bacon and drain on a paper towel. Pour out bacon fat, leaving about 2 tablespoons of it in the pot.
- Peel and chop potatoes into cubes. Set aside.
- Chop rosemary, celery, onion and fennel.
- Add the rosemary and chilli flakes to the pot and cook for 1 minute. Add the rest of the chopped veggies from step 3, and cook for about 10 minutes until soft.
- Pour in fish broth and bring to a simmer.
- In a separate pan, add butter and stir in flour. Cook for 3 minutes, stirring well.
- Scrape the roux into the soup and bring to a boil.
- Add in potatoes and clam juice, and constantly scrape the bottom of the pot.
- Season with salt and black pepper and allow to cook for another 10 minutes or until potatoes are soft.
- Stir in cream. Add oysters and bacon to the soup and simmer for 3 minutes or until oysters are just cooked.
- Spoon chowder into bowls and sprinkle with chopped chives. Serve immediately with bread.

Japanese Horsehair crab is a wild seafood unique to Hokkaido. The crab shell is covered with spines, hence the name. Although the crab’s body is small, the meat is full and tender, and the crab roe is rich and sweet. Best served steamed, in hot pot or as a cold dish.
Snow Crab and Rice Salad - Serves 4
Steps
Cook the rice:- Rinse the long-grain rice.
- Bring water to a boil, add some salt and then the rice.
- Boil without stirring until the rice is softened but still al dente. Do NOT cover the pot.
- Drain the rice. Set aside to cool down.
- Finely dice the celery and fresh cucumber.
- In a large bowl, sprinkle the crabmeat with lemon juice and zest, and let stand for 5 mins.
- Into the crabmeat, mix the cooled rice, celery, cucumber (both fresh and pickled), apple, corn and chopped fresh herbs.
- Prepare the dressing by mixing all dressing ingredients and seasoning with salt and pepper.
- Garnish with butter lettuce on top.

Japanese Frozen Boiled King Crab Leg

Lobster Spaghetti - Serves 4
Steps
Cook the lobster:- Insert a skewer into the lobster.
- Add peeled onion, carrot and celery to a pot of water and bring to a boil.
- Add the lobster into the boiling water. Cook for 3 minutes.
- Remove the lobster from the stock and plunge into iced water. Then remove the skewer and tear off the head.
- Cut the belly with scissors and extract the meat.
- Break the claws with a meat hammer and extract the meat.
- Put the lobster into a hot frying pan with olive oil, and fry.
- Add cognac and flambé, then cut the meat into pieces.
- Cut lobster shells to pieces with scissors.
- Cut vegetables into large slices, and bake in the oven for 20 minutes at 180-200℃ till golden.
- Fry vegetables in a saucepan with olive oil. Add shells and fry a little.
- Add tomato paste and cook for 5-6 minutes. Sprinkle with cognac, set on fire, then pour in 4.5-5 litres of water and bring to a boil. Reduce heat and cook on a low heat for 1.5 hrs, then season with black pepper and salt.
- Pulse the batter in a blender and rub through a sieve.

Steps
- Cut the raspberries into halves, and quarter the strawberries.
- Put caster sugar, egg yolks and wine together in a large mixing bowl. Set the bowl over a pan of barely simmering water on a low heat.
- Keep whisking over a very low heat until it thickens, doubles in volume and turns pale. When you lift up the whisk, it should leave behind a ribbon trail.
- Take off the heat and leave to cool to room temperature, then fold in lightly whipped double cream.
- Place the blueberries, strawberries and raspberries at the bottom of a serving dish.
- Top with the sabayon and glaze very quickly with a kitchen blowtorch until the surface is slightly brown.
- Spinkle lemon zest on top, dust with icing sugar and serve.
