As this year marks the 25th anniversary of city'super, we have invited a number of local brands to take part in our SALUTE TO CRAFTSMANSHIP three-part event series. By collecting and presenting the inspiring stories behind these brands and their offerings, we want to pay homage to their creativity, professionalism and relentless pursuit of perfection.
In the past 25 years, city'super has experienced many successes and challenges, and is dedicated to providing the highest quality products and shopping experience to our customers. Beef is first soaked in a marinade made with ingredients such as Sichuan peppercorn, star anise, cinnamon, then sous vide for a few hours until soft. What is the first thing that comes to your mind when you hear the words ‘Akita Prefecture’? Is it Akita Inu? Or Akita Bijin? Situated in northeastern Japan, Akita Prefecture is the home of Akita Inu and is famous for its rice farming and sake brewing industries. Two-thirds of the breweries in Akita have been around for a century, of which Ohi’s family Tenju Shuzo is a significant player in the industry and a pioneer in brewing sakes with flower yeast.

Running a sake brewery requires teamwork, but leading the brand to grow and succeed is definitely the most important duty of the president. Most breweries in Japan are family-owned and passed down through generations. Tenju Shuzo was founded in 1830, so it has a heritage spanning more than 190 years. The Ohi family has continued to guard the brand, with each president inheriting the name of the founding head, Eikichi Ohi. Two seventh-generation Ohi brothers now fill the CEO role, with Takeshi Ohi as the President and Hitoshi Ohi as the Managing Director. They are dedicated to brewing sakes that make people happy using the finest local produce, and to being a brand that makes Akita Prefecture proud. The partnership between city'super and the Ohi family dates back to 2000, bringing the best Akita sakes to connoisseurs in Hong Kong.
The meaning behind “Tenju” is direct and straightforward – a wish for longevity. When the brand was first established, it produced sake labels like “Tamanoi” and “Inenohana”; it was only during the early Showa period, in 1926, the brand was unified as “Tenju”. The name itself is somewhat related to China as it is taken from the stone carving of the Diamond Sutra on Mount Taishan in Shandong Province, China, which is more than 2,000 years old. It has become the identity of the brand. The brand embodies a wish to brew the best sake that transcends time, and for all those drinking Tenju sake to live a long life. Apart from the “Tenju” label, another famous label by Tenju Shuzo is “Chokaisan”, named after the mountain is where the brewery is located and where it gets the high-quality water for brewing its sake.
It is often said that “good-quality water and rice make good sake”. Tenju Shuzo is favourably located in Yashima town, Yurihonjo, Akita Prefecture, now merged with other towns to form Yurihonjo City. If you take the Chokai Sanroku Line, Tenju Shuzo is right near the last stop, Yashima station. Akita Prefecture is not only well known for its high-quality rice farming, but also offers natural, good-quality spring water from Chokaisan, the second highest mountain in Tohoku at altitude 2,236m, for Tenju Shuzo to brew its sake.
With its impeccable location, the brewery enjoys competitive advantages that are unique to Akita Prefecture. Firstly, Chokaisan is one of Japan’s 100 famous mountains. Due to its similarity to Mount Fuji, the Yashima area where the brewery is situated is often referred to as “Dewa Fuji”, a reference to the Dewa Mountains next to it, located in the Koyoshi River area, where good-quality rice is harvested. With a large annual temperature range and heavy snowfall that adds to the high-quality subsoil water, the sake rice is cultivated in a favourable environment with low temperatures and allows for long-term fermentation. In addition to rice, Yurihonjo is home to Jersey cattle, producing well-loved fine Jersey milk and related products like ice cream. A trip to the Tenju Shuzo area would therefore include good sake and tasty dairy products.
Akita Prefecture is known for its rice production, including famous varieties of rice grown for eating. As sake rice is an essential ingredient for sake brewing, Akita Prefecture began to develop rice suitable for sake brewing in 1988. The president of Tenju has long recognised the importance of rice and has made “sake brewing starts with rice growing” a guiding principle, making sure that equal effort is given to brewing sake and growing sake rice. At that time, only a limited quantity of sake rice was produced in Yuzawa city, Akita. Tenju Research Group was founded by then President Ohi in 1983 (Showa 58) to facilitate the farming of sake rice by the brewery and local sake rice farmers. The goal is to achieve self-sufficiency. To this day, the brewery collaborates with 12 local farmers, who supply all the rice the brewery needs. The raw sake rice produced includes Miyama Nishiki, Akita Sake Komachi, and the newly developed Hyakuden and Ichihozumi. Sake rice has become another signature produce of Akita and offers the finest raw ingredient for the sake brewing industry.
Brewing is a scientific process led by a professional Toji, or master brewer. Even a minor change in one single step of the process can bring about a vastly different result. Tenju Shuzo has been striving for excellence over the years, constantly upgrading its equipment, such as the fixed-quantity automatic measuring machine and dehydrator. Constant inspections are carried out at every step of the brewing process to achieve superior results. Moreover, the team often experiment with different kinds of brewing method to create sake in various styles, like Kimoto and the second fermentation in bottle technique. The role of a Toji is crucial in improving sake quality. For Tenju Shuzo, Toji Mr. Yousuke Ichinoseki is the youngest member of the current Sannai Toji group. The gatekeeper of quality at Tenju Brewery, he also won Chief Toji Recognition by the Governor of Akita Prefecture at the 2020 Akita Prefecture Sake Competition.
The yeast used in sake brewing is often a crucial contributor to the sake’s aroma. Tenju Shuzo is famous for using flower yeast to brew its sake. The brewery has had its eye on natural flower yeast for a long time and was the first to research sake brewing with flower yeast. The current president Mr. Takeshi Ohi is the first president of the Flower Yeast Research Group at Tokyo University of Agriculture. Dedicated to the promotion of and research into flower yeasts, the group has so far developed more than ten varieties of flower yeast. It also organises tasting sessions and seminars throughout the year. Flower yeasts may sound romantic, but it is a scientific process that harvests yeasts from flowers. Tenju’s signature Tenju Chokaisan Junmai Daiginjo is brewed with flower yeast ND-4 from dianthus flowers, making it a perfect example of the special relationship between Tenju Shuzo and flower yeasts.
The Tenju sakes are mostly made with Miyama Nishiki rice. Sake brewed using this rice is very different from that made with Yamada Nishiki. The former gives a more delicate aroma, unlike the grander aroma of Yamada Nishiki. The various flower yeasts also give different scents, like the refreshing dianthus flower yeast ND-4 and the rich-flavoured Abelia flower yeast AB-2. It is, therefore, important to smell Tenju sake before tasting it. The brewery also produces other sakes with various characteristics, such as Junmai-shu, which features a rich rice flavour; Kimoto sake, which has a pronounced lactic note; and sparkling sake, which is highly refreshing.
Tenju Shuzo has long been recognised as an influential sake brand in Akita Prefecture. It is well-loved by local and international connoisseurs and has garnered numerous awards worldwide in recent years. Chokaisan Kimoto Junmai was awarded a silver medal in the UK’s International Wine Challenge (IWC) 2020. Chokaisan Junmai Daiginjo was awarded a gold medal in the Kura Master 2020 in France, a silver medal in the US Sake Appraisal 2020, and a grand gold medal in Japan’s Fine Sake Awards 2021. Tenju Shuzo was also ranked one of the top 20 breweries in the World Sakagura Ranking 2020. These awards show that good sake knows no frontiers. The affection that the brand received both locally and internationally proves that hard work pays off.
One of the missions of Tenju Shuzo is to brew sake that pairs well with food, enabling a complete dining experience for its customers by enhancing the flavours of both.

This collaboration features two very special characters: city'super’s Chef Polar and Dassai’s Kawauso Kun. Dassai’s name came from Asahi Brewery’s location “Osogoe”, where many otters frolic in the nearby rivers. The otters would lay out all the fish they caught on the shore as if they are showing them off – like one would during a festival. So Dassai literally translates to “otter festival”. For Chef Polar who came from the North Pole, he travelled around the world looking for food due to a food shortage back home, and met Kawauso Kun when he got to Japan. The two became great friends, as Chef Polar began to learn about slow-living and the importance of sharing from Kawauso Kun.

How to handle food waste has been a huge land and environmental challenge in Hong Kong. For this part of the Salute to Craftsmanship - Local Farmers series, we are introducing local company FoodCycle+, which aims to relief the stress on landfills and at the same time promote the local farming industry. Let’s find out more about this long-term partner of city'super!
Co-founder Ms Hermia Chung has over 10 years of farming experience and the vision to promote local organic recycling. Her company has successfully turned food waste into the 100% made in Hong Kong and highly efficient MixO’ Plus Organic Compost, which is being used to grow fresh, healthy and low-carbon vegetables, and at the same time mitigating climate change by sequestering carbon into soil.
Local Okinawan Bitter Melon (Food Waste Compost) The founders of the farm visited Okinawa in Japan to learn the techniques of growing Okinawan bitter melons, and the current variety has been perfected through trial and error. The bitter melons are fresh, crunchy with a sweet aftertaste. They are not bitter and are perfect for enjoying in summer.
Local Malabar Spinach (Food Waste Compost) The local Malabar spinach is in season in summer, and are very rare to find in local shops and markets. Malabar spinach harvested on the day is very fresh and tender, and is suitable for stir-frying or making soups.
MixO’ Plus Organic Compost (Local Food Waste Compost) Hong Kong’s first certified organic food waste compost, which has been made by collecting food waste from herbal tea dregs, coffee grounds, beer hops and bean dregs. These food waste act as “herbal medicines” for plants, improving the quality of soil which in turn allows plants to grow better.

Young Master Established in 2013, Young Master Brewery is Hong Kong’s largest and most highly rated craft beer brewery. The brand injects original thinking and disciplined execution techniques into their beers to create world-class brews that celebrate Asian culture. They fully own and operate two brewing facilities in Hong Kong, one in Wong Chuk Hang and other in Ap Lei Chau, housing Asia’s largest wood barrel ageing program and a custom-built oak foeder for their mixed-culture fermentation program. In recent years, Young Master has expanded beyond Hong Kong, and has already received numerous international awards.

city'super has specially curated a range of wines skilfully made by Italian wineries, with wonderful stories of craftsmanship behind them. We also introduce the characteristics of wine of different regions, from north to south, allowing you to travel around Italy through the medium of wine.
Beautiful wines from legendary estates: Accornero wines are specially curated by city'super and all have wonderful stories behind them.
Italian boutique winery Accornero was established in 1897, and the family has been carrying on the tradition with the same passion as their founder Bartolomeo. All the grapes they use are from the family’s own vineyards. In August, they prune the vines and select the best branches, while in September and October, the ripe grapes are hand-harvested for winemaking. The winemakers have been using subsoil for the past few centuries to dig cellars called “infernots”, which allow for wines to be stored naturally at the right temperature. Today, infernots are recognised by UNESCO as a World Heritage Site of Humanity.
While Accornero remains true to the authentic regional traditions of the winemaking processes, the wine cellars are also equipped with modern technology. The winemakers ferment and macerate the grapes in temperature-controlled stainless steel tanks, then, after soft pressing, the ageing process continues in oak barrels to ensure the best-quality wines.
Recommended:Accornero Cima Riserva Barbera 2012 / 2015 Impenetrable colour, intense bouquet, warm and elegant in the mouth. The wine is created with overripe grapes, with a higher concentration of fruit highlighted by a long maceration.

Along the borders of Northern Italy are six major wine regions, each of them an absolute heaven for winemaking, including the famous Piedmont and Lombardy. In the foothills of the Alps, the wonderful terroir of these regions is perfect for growing grapes and making wines that are rich and fragrant.
Piedmont A typical Italian wine-producing region, Piedmont is loved by many wine enthusiasts. Vineyards from this region are mostly on slopes with great land structure and nutrient-rich soil. This area has a continental climate with a very cold winter and a very hot summer. The extreme temperature differences between day and night as the grapes ripen allows for more character and creates wines with rich, lingering flavours.
Recommendation: Accornero Giulin Barbera 2016 This wine is made with 100% Barbera, and has a ruby colour and is fruity and harmonious on the nose. Well-structured and extremely pleasing to the palate with red fruit flavours.
Lombardy One of Italy’s best wine-producing regions, it features various terrains and is completely surrounded by land with many lakes. The temperature difference between day and night is rather large, with a good balance between temperature and humidity, making this an excellent region for growing grapes.
Recommendation: Ca’ Del Bosco Cuvee Prestige DOCG NV Sweet floral, pear, orange peel and honey notes coat the palate at first, followed by a mild yeasty, cheesy aroma. The finish is cool and refreshing.

Tuscany The star region of Central Italy that is comparable with Bordeaux in France. Sangiovese is the most well-known grape variety produced in the region and its quality is unmatched.
Recommendation: Terralsole Brunello di Montalcino Riserva 2007 Soft cherry and tobacco aromas backed by chocolate, cookie dough, caramel, liquorice and even a touch of dusty white pepper. The chewy pulpiness of the fruit is very pleasant, giving the wine extra intensity and smoothness in the mouth.
Volpaia Coltassala Chianti Classico 2016 Castello di Volpaia is one of the oldest estates in Italy and widely recognised as one of Italy’s leaders in organic viticulture, with all its vineyards certified organic by the EU. This wine is well-structured and complex with an elegant note and hints of vanilla, cacao and black fruit.
Umbria With lots of hills and slopes, the region is filled with vegetation with a beautiful, serene environment, and is often known as the Green Heart of Italy. Sagrantio, the King of Tannins, is a special grape variety in the region. It is usually harvested in October, and the wines made from these grapes are intensely rich.
Recommendation: Scacciadiavoli Sagrantino Montefalco 2015 Baked plum, coconut, toast and vanilla aromas mingle together in this brawny red. The solid palate shows French oak, roasted coffee beans and stewed prune alongside grainy tannins.
Scacciadiavoli Sagrantino di Montefalco Passito 2016Intense ruby red with violet shadings, this wine is expansive and persistent with sweet fruits, notes of blackberry, black cherry and a subtle nuttiness. It is velvety, soft with a voluptuous body. The tannins are thick and the acidity is well-balanced, cutting the density and heaviness while giving structure. It has a long finish that is persistently fruity with notes of underbrush, forest fruit and complex, intense spices. Perfect with pastries or chocolate.
Sardinia is an island located to the south-west of the Italian peninsular. The area has a moderate climate and humidity with low rainfall – a typical Mediterranean climate. Along the ocean and inland are regions with vineyards that are able to make the most of the terrain and climate to create wines that are unique and distinctive to the region. Because of this, wines from this region can vary greatly in terms of characteristics.
Recommendation: Linea Sogno Carignano del Sulcis Buio Buio 2017 With a deep straw-yellow colour with green reflections under the light, this wine is intense, rich and complex, with aromas of mature yellow fruits, Mediterranean shrubs and iodine, as well as hints of sweet spices and pastries. Energetic and quick-fire on the palate, this wine pairs excellently with strong-tasting pasta and rice dishes, grilled fish, white meats and medium-ripe cheeses.
Linea Sogno Vermentino Sardegna Opale 2019 With an intense ruby red colour featuring bright, iridescent tones, this wine has rich, complex aromas that first reveal themselves in flowery, red berry notes, then in tones of Mediterranean balsam and oriental spice. On the palate, this wine is rich, full and satisfying, with a silky, layered progression. Pairs well with game birds, roast lamb, goat and mature cheeses.

Gabriele Scaglione Ostinatamente 2015 This wine has an intense straw-yellow colour with a hint of amber. On the nose are intense but delicate floral and fruity notes. On the palate are a mild fruitiness and notes of herbs. Pairs well with cheeses, crustaceans and fish.
Recommended Pairing: Orbetello Italian Chilled Farmed Seabass Fish Mostly produced in Orbetello in Central Italy, this fish is available all year round. Raised with non-GMO feed, the flavour is sweet with an excellent texture. Suitable for seasoning with sea salt and grilling.
Antica Ardenga Lambrusco NV The grape variety Lambrusco comes from the Emilia-Romagna region in Central Italy. The fruit is dark red with low tannins, which makes it suitable for making low-alcohol sparkling wine. The wine is deep purplish-red with fine bubbles and aromas of cherry, black berry and plum. Pairs well with grilled chicken, lamb and pork.
Recommended Pairing: Devodier Prosciutto di Parma Ham - Eccellenze 36 Months Aged in a cellar for as long as 36 months, this ham is used in high-quality cuisines. The flavour is complex yet fresh, juicy and fragrant with aromas of wood and nuts.
Gabriele Scaglione Barbaresco 2014 With rose petal and sweet spice aromas. Hints of red berry and cherry entice the palate, followed by a slow release of cinnamon and mineral flavours. The wine is elegant with a lingering finish.
Recommended Pairing: Tartuflanghe Extra Virgin Olive Oil with White Truffle 100% made in Italy. Contains white truffle shavings and can enhance the aroma of both hot and cold dishes, including pasta, salads and risotto.

Japanese Ruby Roman Grapes Originating in Ishikawa prefecture, the Japanese Ruby Roman Grapes took the local team 14 years to develop and cultivate. The grape has red wine skin and large pulps double the size of the standard Kyoho grapes. The flesh is juicy and sweet with a mild tartness. The total annual production is very small, hence it is fondly known as “the gem of Japanese grapes” thanks to its rarity. We recommend storing in the fridge and consuming within three days.

Japan Fukuoka Kato Farm Grape Kyoho Pack Kato Farm is located in Fukuoka prefecture. Kyoho grapes are large with dark purple skin, and delicate, sweet, juicy flesh. They also have a rich wine aroma with a hint of candy.
Japan Okayama Shine Muscat Grape The Okayama Shine Muscat Grapes are ranked at the top among the Muscat family of grapes. The “one brand one bunch” method is used in order to maximise nutrients absorbed by the fruit. The sweetness level must reach 18 or more and without any sourness. The skin is crispy and thin, so you can enjoy the fruit with skin on. The grapes are seedless, firm, crunchy and very juicy.
Japan Oita Izumi Farm Shine Muscat Grape Izumi Farm is located in Northern Kyushu. The grapes are cultivated in sandy loam with excellent drainage – perfect for growing high quality fruits with high sugar content. Shine Muscats are large, seedless, oval-shaped with yellowish green skin that can be eaten. The flesh has a musky scent and crunchy texture with a sugar level of at least 17.
Japan Oita Dream Farmers Shine Muscat Grape Dream Farmers is located in Ajimu City in Oita prefecture. The farm has “agricultural innovation through the power of farmers” as their philosophy. The two founders have understood grape cultivation techniques since a young age, and all members of the farm are certified pesticide experts so their cultivation process is completely safe. To give customers the best-tasting grapes, they wait for the grapes to completely ripen before harvesting, giving the fruits a hint of golden colour.
