The French bread is soaked in ‘banana butter’, a combination of
fermented French butter and banana puree with a refined aroma and
richness, and then baked with 3 types of uniquely blended sugar that go
well with the fermented butter to achieve a savoury browning and
crispy texture. The bread is then browned and baked to a crisp.
The flour used to make the rusks was carefully selected to ensure the
ideal bread dough when baked, and the moulds used to bake the French
bread were originally designed to create the cute shape that is typical
of Tokyo Banana.
