Origin: Miyazaki PrefectureThese log-cultivated thick shiitake mushrooms are best rehydrated slowly in water. Rinse lightly, then soak in enough water to cover the mushrooms, preferably in the refrigerator, to restore their rich flavour. They are ready when even the stems have become tender. Do not discard the soaking liquid, as it can be used as a flavourful base for soups and other dishes.
