This thin udon is an original product crafted by Yaginaga and made exclusively during the cold winter season in Handa Town, Tokushima. The area is known for its deep winter snowfall and the strong, chilled winds from the Shikoku Mountains—conditions that help create noodles with a firm, resilient texture.
The dough is stretched carefully using traditional hand-stretching methods, resulting in smooth, delicate noodles with a pleasant bite.
Cooking tip:
Bring plenty of water to a full boil, add the noodles while loosening them, and cook for 6–7 minutes. Drain well and rinse under cold water.
Serve with dipping sauce for a chilled dish, or enjoy in hot broth as warm udon.
