“Salfiore di Romagna”, also known as “Sale dei Papi” (Salt of the Popes), collected according to the traditional method at The Cervia Salt Pan, located at the most northerly in Italy, this is a whole sea salt but sifted to obtain medium-fine grains. It is sweet and rich in trace elements, as it is simply collected, left to dry in the sun and washed using the salt pan “mother” water. This medium-fine grain sea salt makes an excellent seasoning for nearly everything, from vegetables to roasted meats to even gelato.
