Feature:
Tamago-men (egg noodle) is a traditional specialty of Iwate, with a history said to span over 300 years. Almost all of the kneading liquid is made from fresh eggs, combined only with wheat flour and salt, resulting in a simple yet distinctive noodle. Its natural yellow colour, firm texture, and mild sweetness from the eggs give it a unique character.
It can be enjoyed in the same way as soumen—served chilled with dipping sauce, or warm as a simple bowl of noodles.
Cooking tip:
Prepare dipping sauce, condiments, or toppings before boiling. Add the noodles to at least 2L of boiling water, loosen gently, and cook for about 4 minutes while adjusting the heat to prevent boiling over.
Drain well, rinse thoroughly under running cold water, and serve.
Store in cool dry place
