Feature:
This soumen is crafted in Nagasaki using the traditional hand-stretched method. Five black ingredients—black rice, black soybeans, black sesame, pine nuts, and black karin—are milled into a fine powder and kneaded into carefully selected high-quality wheat flour. The dough is slowly matured, then gently stretched in multiple steps to achieve a smooth, elegant texture and refined flavour.
Cooking tip:
- Boil in plenty of water (at least 500 mL per bundle).
- Add the noodles while loosening them, cook for 1–2 minutes, then drain immediately.
- Rinse thoroughly under cold water to remove excess starch, drain well, and serve chilled or hot as preferred.
