Feature:
This soumen is made using the traditional Shimabara hand-stretched method, with finely ground black sesame kneaded into the dough. Compared with regular soumen, it is slightly thicker, offering a texture that feels somewhat similar to soba—smooth, aromatic, and pleasantly hearty.
Its rich sesame fragrance pairs well with both cold and hot dishes.
Cooking tip:
Boil in plenty of water for about 3.5–4 minutes until it reaches your preferred firmness. Rinse well in cold water.
Enjoy it chilled in summer (cold soumen or bukkake style), or warm in winter as nyumen or in hot pot. Thanks to the use of strong wheat flour, the noodles hold their texture well even in hot dishes.
