Brand Story
Asahi Shuzo was established in 1948 in Yamaguchi Prefecture with the mission to bring customers delicious and joyful sake. Hence the brewery’s creations are all at junmai daiginjo grade with an average polishing rate of 41%. Dassai sake’s refreshing and pure flavour is especially enjoyable while camping.
People’s Choice: Dassai Future With Farmers (16%)
The sake is made with out-of-grade Yamada Nishiki rice and it took 10 days to achieve a polishing ratio of 8%. Out-of-grade rice means having a low percentage of starchy core which makes the rice polishing process much more difficult. With this challenge, Dassai has proven that even out-of-grade rice can produce fruity, pure and smooth sake.

Asahi Shuzo was established in 1830, and has become the largest sake brewery in Niigata Prefecture. In 1985, it launched its flagship Kubota series, which is characterised by elegance and lightness. The brewery insists on strict temperature control to ensure excellent aroma and taste for its sakes.

Brand Spotlight #1: Chikurin
The brewery has been growing its own rice for sake-making since 1987. In 2008, it released a sake made purely from organic rice.

A winter limited-edition sake with the theme of starry sky on a cold night. Brewed with Yamada Nishiki planted by the brewery, the sake has a refreshing flavour and soft sweetness.

Imada Shuzo is the only brewery using Hattanso – a local rice variety originated from Hiroshima – for making sake. Fukucho sakes are known to have a smooth and mellow flavour. This practice helps preserve the aroma and freshness of the sake.

Brand Spotlight #1: Rihaku
This brewery is from Shimane Prefecture. The name Rihaku Shuzo comes from Li Bai, a famous Chinese poet in the 8th century, and was given by a former Prime Minister of Japan, Reijiro Wakatsuki, who loved Rihaku sake as well as poetry. The brewery has been promoting sake to the overseas market since the 1980s, and is one of the pioneers that built the foundation of today’s flourishing sake market.

This sake with a wonderfully poetic name has a romantic floral fragrance that immerses you into the beautiful sceneries depicted in Li Bai’s poems. A sake with a complex taste and long finish.

Izumibashi Shuzo was established in 1857. With the philosophy that “sake brewing starts with growing rice”, the brewery grows excellent sake rice, including Yamada Nishiki, in Ebina in Kanagawa. It makes sake without adding any distilled alcohol in order to amplify the authentic flavour of rice.
Top Pick:Izumibashi Rakufumai Jm Daiginjo (16%)
Immerse yourself in nature and embrace a serenity that’s truly yours – as if you’re a dragonfly. This Kanagawa sake has been polished to 35% and brewed using the traditional Kimoto method. Richly fragrant with an elegant sweetness, the sake has an excellent balance between the acidity typical of Kimoto sake and the umami of sake rice.
