Cream of Pumpkin Soup
Ingredients
- Pumpkin 1.2kg
- Onion 200g
- Sweet Potato 500g
- Garlic 20g
- Olive oil 30g
- All-purpose Flour 120g
- Chicken Stock 2.5L
- Cream 125cc
- Salt
Steps
- Wash the onion, pumpkin and sweet potatoes.
- Peel and cut them into dice.
- Heat up the saucepan with olive oil.
- Sauté the onion for 5 mins.
- Add chopped garlic, pumpkins and sweet potatoes and sauté for another 15 mins.
- Add flour and keep sautéing for 5 mins.
- Add chicken stock and keep boiling for 45mins in medium heat.
- Blend all the ingredients.
- Add cream and salt to taste
