A French Encounter: Autumn Delicacies

Autumn is the harvest season, which means it’s a great time to feast! Mushrooms and chestnuts from France are exceptional raw ingredients, and now, thanks to city’super, you can enjoy them without the leaving the city!

French Bruno Calegari Pink and White Mushrooms
Dating back to the 18th century, Bruno Galegari Farm produces mushrooms in a traditional way on more than 15 hectares of underground galleries. Well sheltered in the darkness and humidity of the cellars, the mushrooms are not affected by weather conditions and can retain their purest flavours. The mushrooms are strictly hand-selected by experts at the farm to ensure freshness and the best quality. No extra water is needed in cooking, and the mushrooms have a firm yet bouncy texture.

French Chanterelle Mushroom
Chanterelle is a wild mushroom that grows in deciduous and coniferous forests and in low-humus, acid soil. It is funnel-shaped and its colour varies from pale to dark yellow. With a mild peppery flavour, the Chanterelle is ideal for making sauces and added to meat dishes. Must be stored dry in the refrigerator.

French Chestnut
Chestnuts are very presentative of the French autumn, with the locals referring to autumn as “the season for chestnuts” (or la saison de la châtaigne). French chestnuts are large, sweet, has a light crunch, and can retain its sweetness even after cooking.

 

Autumn Only: Japanese Matsutake Mushrooms

Autumn is the perfect season for mushrooms, and matsutake mushrooms, aka “King of Mushrooms”, is no doubt the cream of the crop. This autumn, city’super brings you precious, seasonal matsutake mushrooms for a feast bursting with earthy delicacies.

Best enjoyed end of September to beginning of October, Japanese matsutake mushrooms are very rare as they only grow naturally in forests under ample sunlight and cannot be cultivated on a commercial scale. Matsutake mushrooms grow under trees, which gives the mushrooms a very unique refreshing aroma. They are also highly nutritious and contain more vitamin C and vitamin B1 than most fruits and vegetables, and more vitamin B2 than meat.

You can try grilling, steaming, cooking with soup or rice, or making tempura with matsutake mushrooms, all of which are great ways to express their lovely flavour and texture.

This soup is made from Shinshu Shimeji Mushrooms; simply pour hot water onto the product to dissolve it for a tasty mushroom soup. You can also add Japanese-style rice cakes or rice for a hearty dish!

Unzenkinoko Youyou Noodle (with Mushroom)
Unzenkinoko Honten, located in Shimabara Peninsula, Kyushu, is one of the famous specialised mushroom cultivation factories in Japan. It uses water from Mount Unzen volcano, and has strict standards when it comes to light and humidity, providing local residents with fresh mushrooms every day. Its Youyou noodles come with mixed mushroom toppings, and takes only three minutes of submerging in hot water to create an easy, tasty meal.

Yamamori Matsutake Mushroom Mix For Rice

city'super is proud to introduce Germen boutique vineyard Weingut Hubertushof, where all its grapes are handpicked, and its wines are elegant, always balancing fruitiness and minerality.

About Weingut Hubertushof
Located at the village of Trittenheim in Mosel and owned by the Clüsserath family, Weingut Hubertushof’s history dates back to 1780. Over 70% of their vineyards are situated on the steep slope neighbouring the Moselle River, including parcel at the famous Altärchen and Apotheke, where all the grapes are handpicked.

Hubertushof Riesling Spätlese Dry 2017
Pronounced aromas of apple and aniseed. Dry on palate with a creamy texture and has notes of citrus, stone fruits and spice. Finish is long and delicate.

Hubertushof Riesling Kabinett 2013
Light and fresh on the nose with apple, pear and pineapple notes. Off-dry; palate is round with green fruits and mineral. The finish lingers with crisp acidity.

 

Fantastically French: Domaine Bernard Millot Wines

Lover of French wines certainly appreciate the French’s pursuit of excellence when it comes to wine-making. Don’t miss out on wines from the Domaine Bernard Millot vineyard, a family-managed estate situated in Meursault with a history in wine-making that dates back to the 1700s. All their vines are planted with sustainable and organic methods; the owner believes in preserving the typicality of the land to let the terroir express itself, so he limits the use of new oak and no yeast is added during vinification.

Domaine Bernard Millot Meursault Cuvée Alexie 2016
Vine age is 40 to 50 years old on average. There are notes of floral, lemon and green fruit, with flavours of ripe citrus and a touch of toast on the palate; long and firm finish.

Best of the Best: La Reine Pédauque Wines

In the wine world, each wine-producing region has its own unique characteristics, and the appellation of Côte de Beaune is synonymous with excellent wines.

city’super highly recommends wines from La Reine Pédauque, which was established in 1936 and is one of Burgundy’s largest wine merchant, situated on the edge of Bois de Corton in Côte de Beaune.

The maison has access to 150 hectares of vineyards, ranging from regional wines to Grand Crus with around 90 parcels. In order to ensure quality, they work closely with the winegrowers through different processes, including yield management, manual harvest and sorting.
In general, the reds and whites are aged with used French oak for 12 to 20 months and 10 to 18 months respectively. A blind tasting session will also be held with their winegrowing partners to evaluate the quality of each cuvee for every vintage.

Burgundy Newcomer: Jean-Luc & Paul Aegerter

Founded in 1988, Jean-Luc & Paul Aegerter is one of the up-and-coming producers in Burgundy. This family-managed estate has been awarded and recommended by notable media including Decanter and Wine Enthusiast. By combining tradition and innovation in wine-making, their wines are delicate, fine and balanced, revealing the unique terroir of all 40 appellations they offered.

Jean-Luc & Paul Aegerter Chablis 1er Cru Vieilles Vignes 2016
Fresh and lively with a mineral nose and notes of green apple, lemon, mint and acacia; it has a beautiful bouquet and refreshing flavours – a chablis with a long finish that is dry and perfectly elegant.

This wine matches perfectly with French city’super Special Oyster Nr.0, which was cultivated in the famous bay of Mont Saint Michel with rich phytoplankton to provide nutrients for the oysters. The oysters are meaty and sweet without losing the unique flavour of the “Bay of Mont Saint Michel”.

Domaine Aegerter Nuits-Saint-Georges 2016 / 2017
With notes of black cherry and plum on the nose, the wine has a rich body with firm tannin; dense and elegant.

Champagne & Cheese Pairing with Philippe Gonet

Beautiful, golden Champagne is elegant, seductive and romantic – a must-have for every celebration. city'super has brought you two wines from Philippe Gonet in France, as well as a lovely truffle cheese for an excellent pairing!

About Philippe Gonet
With the cellar dating back to 1783, Philippe Gonet is located at the heart of Le-Mesnil-sur-Oger neighbouring the famous Champagne Salon, and a stone’s throw away from the legendary parcel Clos du Mesnil. The estate owns 23 hectares of vineyards in total and divided among 11 parcels, which are all Grand Crus or Premier Crus. The oldest vines were planted back in 1929. Only natural and traditional approaches are applied in their vinification, and the annual production is small which allows them to ensure better quality for each cuvee.

Philippe Gonet Belemnita Grand Cru Blanc de Blancs Brut 2005
Only produced in exceptional vintages, only 2,700 bottles of this wine were produced in 2005. With a hint of toasted brioche accenting flavours of apple, pear, lemon, smoke and crystallized honey. Refined texture, focused acidity.

Philippe Gonet Réserve Brut NV
Fruity and floral nose with notes of pear and apple. Full-bodied and well-balanced. Supple and elegant with fineness on the finish.

We recommend pairing with Brie with Truffle 2.5%. This sophisticated cheese has a powerful flavour of fresh Perigord truffles and a smooth texture.

Aromas of toasted brioche and hazelnut as well as stone fruits. Full-bodied, with elegant flavours of apple, toast, peach and nectarine over the palate. Well-structured with bright acidity.

The first phase of the revamped city’super Times Square store reopens with a new look and an innovative "Buy & Dine" and "Dine & Buy" one-stop shopping and dining concept. Through incorporating the Foodie Wonderland retail concept, the newly-opened Amazing Food Hall is offering different kinds of appetizing dishes for customers to savour while they can also purchase these premium ingredients at the food market to replicate the gourmet experience at home. The top seven zones include Seafood Kitchen, Sushi & Sashimi, Oyster Bar, Butcher Factory, Noodles & Pasta, Super Green, and Wine Town.

There are over 150 seats inside the Amazing Food Hall, customers can enjoy a relaxing gathering with friends over fine wines and delectable cuisine made with the quality ingredients available at city’super while shopping for the finest lifestyle products at the same location.

2. The Game starts on 16 August 2019 and ends on 31 August 2019 23:59 (Hong Kong Time) (‘the Game Period’).

3. Participants must be Hong Kong permanent residents aged 18 or over and live in Hong Kong. Participants must agree to and comply with the terms and conditions of the Game.

4. Participants must join the Game through their own Instagram accounts and follow the steps below to join the Game within the Game Period in order to be eligible to participate in the Game and to qualify as a potential winner:

a. Follow city’super’s Instagram Page (@citysuperhk);
b. Like the Game’s Instagram post;
c. Taste any dish at Amazing Food Hall and capture an image of it
d. Find and capture image of the dish’s main ingredients at city’super store
