Sanma with Matsutake Sansho Sauce (4 portions)

 

Ingredients (for 4)

  • Sanma 4pc
  • Matsutake 4pc
  • White radish puree
  • Sake 180ml
  • Mirin 60ml
  • Ginger 5pc
  • Kombu 1pc
  • Water 350ml
  • Oyster sauce 1 tablespoon
  • Soy sauce 2 tablespoon
  • White vinegar 2 tablespoon
  • Red Miso 2 tablespoon
  • Sesame oil 11/2 teaspoon
  • Rock sugar 55g

Steps

  1. Remove sanma’s organ and wash.
  2. Add all condiments except red miso, oyster sauce and sesame oil. Then, put sanma in, cover the lid and cook for 20 minutes. Open the lid. Add red miso, oyster sauce and sesame oil and cook for 8 minutes. Cook matsutake. Ready to serve.
