• Purple brussels sprouts are cross bred of a red cabbage variety with a green brussels sprouts variety. Due to the sweet flavors, purple brussels sprouts attract more pests than their green counterpart, they are only available in the fall and winter months. Purple brussels sprouts offer a slightly nutty and much sweeter flavor than their green counterpart, and have been found at high-end restaurants and markets. When cooked the purple coloring will fade slightly but will not disappear.
