- Junmai Daiginjo is brewed through the traditional method of using Yamahai Shikomi to maximize the efficacy of lactic acid bacteria. It has a refreshing sour taste, and at the same time has a mellow taste that is unique to the method of Yamahai Shikomi. It is suitable to be enjoyed with fragrant dishes such as barbecue and grilled meat.
